But assuming you meant 'shrimp' in the sense of 'small', there is a fundamental difference. 'jumbo shrimp' sounds like a juxtaposition of terms with opposite meanings. 'Almost identical' is no different than saying that 'A line is almost straight'. If one means that in almost all aspects, two items are identical, and difference only in one, why does not 'almost identical' apply? Anyway, I'll accept your wording as well.
